Owner states that although the pasta and the macaroni were cooled since the night prior, he had used a room temperature mayonnaise for the salad prep. He states that he has an order for a quantity of macaroni salad this morning. Both salads were placed into metal food trays and returned to walk-in to achieve rapid cooling. Proper temperature was achieved at time of inspection. 2 refridgerator display units temperatures adequate. Walk-in temperatures adequate. Education given on all violations. All violations may result in enforcement. Operator will maintain wash, rinse, sanitize, air dry operation of equipment and utensils; as well as maintaining protected sanitizing cloths as discussed. |
