Taco rack previously cited for surface has been replaced with new, smooth, and cleanable shelving units. 2. Sanitizing test strips ordered todays date. 3. Alcohol wipes provided to sanitize probe thermometer todays date. Hot hold pasta at 183 degrees during service. Hot hold meatballs in tomato sauce at 174 degrees during service. Pastas in hot holding unit measured at 175 degrees. Active, adequate sanitization found at time of inspection; measured by inspector. Upon discussion, sanitizing test strips were ordered and will be used to maintain proper sanitization levels. Refrigerator temperatures adequate. Ambient thermometer present. Walk-in temperatures adequate. Service line milk cooler temperatures adequate. Dishwasher rinse at 180 degrees. All violations must be corrected and may result in enforcement. All violations may result in enforcement. Kitchen Manager Karen Terry present at time of inspection. Service of lunch at time of inspection. Hot holding at service line: -taco meat 183 degrees -cheese sauce 143 degrees -cooked rice 152 degrees Lettuce, tomato, cheese salad on service line placed on trays and then onto the cold holding unit said to have been prepared approximately 9:30 AM this morning. At time of inspection, salads were measured at between 56 and 58 degrees. Salads returned to refrigeration for rapid cooling which was achieved within 20 minutes. Discussion with Kitchen Manager about not using trays; which may be inhibiting the cooling of the food products. All other cold-hold food on service line temperatures adequate. 2-door stand up refrigerator in kitchen temperatures adequate. Dry storage area adequate. Probe thermometer available at time of inspection. Self-service beverage refrigerator 45 degrees ambient. Food service gloves being used. Walk-in temperatures adequate. |
