Eggs next to grill were out less than two hours to accommodate breakfast crowd-inspector requested that they be put back into cooler now that service was slower. Steam table had been loaded immediately prior to inspection; meatballs temped at 106 degrees and it was discussed with cook the need to rapidly reheat products to 165 degrees. Mashed potatoes that had been prepped less than 30 minutes prior to temping at 114 degrees. Reheating on grill with chili, which was temped at 136 degrees. Walk in cooler thermometer placement on fan at 40 degrees; external thermometer 41 degrees; discussed proper placement of thermometer. Buffet Friday nights with various hot foods being served. Discussed with owner the need to keep foods hot or cold while serving within safe temperature ranges. Ice cream prep cooler thermometer 40 degrees; milk temped at 41 degrees. Single use gloves being used by cook to prepare ready to eat foods. Dishwasher heating to 160 during cycle. Owner states that business is for sale. |

Operator did notify DOH about closure and loss of water. Various beverage machines, found in store room, were replaced not due to reasons not related to loss of water. |
