Fried food display contained 2 popcorn chicken cups, 2 onion ring dishes, 1 French fry cup, 2 mozzarella stick dishes, 2 curly fry cups, and 4 chicken tender dishes. All food on display was prepared approximately 1.5 hours prior to inspection. Per operator, food on display is discarded after 2 hours. Hot-holding temperatures: Pasta vasule soup 161F. Cold-holding temperatures - Open-top prep cooler: sliced tomatoes 39F; Bar cooler: milk 33F. Discussed preparing sanitizer and maintenance of cutting boards with cook. Discussed handling garnishes with bartender. Product thermometer provided. Observed proper glove use. Facility observed to be kept very neat and well-maintained. |
