Hot box- foods held at 156 and above - ok. Salad bar - right side bar: sliced tomato 46 dF. Left-side bar: approx 2.5 lbs cottage cheese measured at 11:45 am to be 55 dF and observed that ice beneath cottage cheese bin was not in contact with bottom and sides of bin. Discussed with kitchen manager that all foods are placed in salad bar at 11 am and that any leftovers are immediately discarded at 1 pm. Advised adding more ice to holder around food containers. Overall, kitchen observed to be clean and well maintained.
