Per operator, Sharon, packages of meat (shoulder roast, pork chops, bones) are for personal use, and are not served to patrons. Observed operator relocate packages to personal refrigerator. Observed that proper stem-type thermometers are available for evaluating food temperatures during cooking, cooling, reheating and holding. Noted that louvres are not installed in ventilation hood over grill next to food prep table. Discussed reheating, cooking, cooling and procedures for foods, particularly chili.
