Comments: Dishwasher control panel was in “alarm mode” stating that the rinse temperature was too low, however, maintenance personnel explained that the machine will sometimes go into “alarm mode” between cycles. The machine was cycled and a rinse temperature of 190 degrees F was observed. All holding adequate (TAPHC used for “grab and go” sandwiches”). Temps on the hot line ranged between 170 and 185 degrees F at the time of the inspection. Cold hold temps ranged from 45 to 39 degrees F. Good glove use observed during the inspection.
