Multiple potentially hazardous food items were temped using a metal stem probe thermometer in areas throughout kitchen including reach in cooler, walk in cooler, cold prep buffet line and hot buffet line. Temperatures observed were in range at time of inspection.

Comments: Education provided to staff while staff in the process of slicing deli meats. Upon arrival to food service kitchen there were two large deli hams and a very large piece of cheese stored at room temperature on a cart. One staff person was at slicer in the process of slicing the food products for lunch. Staff stated they were taken out of cooler 10 minutes ago. The exterior temperatures were maintained at 45 degrees F and the center of the product was maintained at 37 degrees F. Discussed with staff that these products must remain in cooler until you are ready to slice. Instructed operator to contact this office at 518-793-3893 when corrections are done.

Comments: Operator had opened two cans of applesauce and found the product near top rim grey discolored. He stated that he had not intended on using it, he had it on counter top for me to observed before throwing it out. None of the bad product from these two cans of applesauce had been served. Documented the information on inspection report and had the operator voluntarily discard product. All other cans of applesauce in this particular shipment had been sent back to distributor. Contacted GFDO for guidance while at facility.
