Food is picked-up from Cedars, where cook temperature is record, than driven approximately 15 minutes to SOFA site and placed in oven for re-heat. Re-heat temperature is verified and recorded. NSF-approved thermometer verified on-site. Temperatures of foods to be served observed to be between 180°F to 190°F.

Comments: Note: At the time of my inspection no temperature logs were being maintained. Operator Christine states that she not usually at this site and is just covering for the day so she is unsure where the normal operator keeps the temperature logs. Some of the food that is out for service temped using my metal stem probe thermometer as follows: sliced ham 122F and hash browns 118F. In discussion with Christine the food was not placed in hot holding today because she arrived only a few minutes prior to service. The food is temped when placed in hot boxes at the meal prep site at about 11-11:15 am, it normally arrives around 11:30 but today it did not arrive until 11:45 or so. The potentially hazardous food items that are left at the end of service are discarded. Potentially hazardous food items must be either be hot held at 140F or more or held for no more than two hours for service and discarded at the end of service.

Comments: No violations noted. Foods are delivered from main production facility on Bay Rd. in Queensbury. Temperatures are checked upon arrival. Food needing heating is held on stove. Temperatures monitored through out service 11:55am until 12:15pm. Ll foods stored in cooler are labeled with open date. All left over food is discarded. Bare hand contact with ready to eat foods is avoided using sanitary gloves. Ensure gloves are changed and hands are washed when becoming soiled.
