Comments: Note: At the time of my inspection no temperature logs were being maintained. Operator Christine states that she not usually at this site and is just covering for the day so she is unsure where the normal operator keeps the temperature logs. Some of the food that is out for service temped using my metal stem probe thermometer as follows: sliced ham 122F and hash browns 118F. In discussion with Christine the food was not placed in hot holding today because she arrived only a few minutes prior to service. The food is temped when placed in hot boxes at the meal prep site at about 11-11:15 am, it normally arrives around 11:30 but today it did not arrive until 11:45 or so. The potentially hazardous food items that are left at the end of service are discarded. Potentially hazardous food items must be either be hot held at 140F or more or held for no more than two hours for service and discarded at the end of service. | ||
