In discussion with John, owner recently prepared chicken alfredo at home residence and brought into the facility in a crock pot to hot hold and serve to customers. Food prepared from an unapproved kitchen, such as a private residence, is prohibited to be served to customers. Only food from an approved source that is prepared and cooked in a NYS Permitted kitchen is allowed to be served to customers. 2. Sliced lemon wedges are present in the bar cooler. There are no toothpicks, tongs, or food handling gloves present at the establishment. Bare hand contact to lemon and lime wedges is prohibited. Must purchase a bare hand barrier such as toothpicks, food handling gloves, or tongs to prevent bare hand contact when slicing and handling lemons. 3. Due to safety reasons, I was unable to access basement to determine if ice machine is equipped with an indirect drain to waste. There is a tall step ladder that leads down to the basement that is resting against the floor. Please verify in writing whether or not the ice machine is equipped with an indirect drain to waste. All remaining violations must be corrected no later than 10/8/15. Must send Corey DiLorenzo an email to [email protected] addressing corrective actions taken to all cited violations no later than 10/8/15. |
