This means that any food that done cooking/reheating or is ready to be eaten without cooking/reheating cannot be touched with bare hands. Example, wash hands, put on gloves, cut raw chicken, remove soiled gloves and discard gloves, wash hands, put on clean gloves, handle desserts or garnish. Keep kitchen to dining room door closed while petroleum spill is being cleaned. Rear side door is allowing fresh air into kitchen. Okay to operate kitchen at this time. Dining will be at diners discretion. Owner advised petroleum odor occurred after flood in 2011. Owner advised this started 2 days ago and he called Mayor of Village then action started. Facility was closed for some time after the flood so petroleum odor was not an issue at reopening in 2011. No petroleum odor in kitchen. Odor in dining area while basement door is open during remediation. Advised owner of restaurant to advise patrons that they will have to dine in the dining area at their own choice. If they are not comfortable in the dining area they need to leave. County Fire Coordinator Office expained that there is no explosion hazard. There is no product visible in the ktchen or dining room. Only small amount of petroleum sheen on water in basement to be remediated by NYS DEC contractor that is on site at this time. No threat to food preparation area. |

Everybody working had hats for proper hair restraint upon arrival. Correct items noted by next routine inspection later in 2016 the shelves in the walkin cooler Item 11D from December 11, 2015 were replaced so that item was corrected, they are shiny metal and easily cleanable. All sauces stored in pails on bottom shelf of walkin cooler are to be cooked with the foods as per the operator even though they are stored beneath the cartona of raw eggs, and raw vegetables on the other side are all cooked even though they are stored under shelf with raw General Tsao chicken (40 degree temperature). becareful when storing raw eggs and meat above items that will not be cooked. |

Gave copy of boil water checklist for food service establishment and reviewed during inspection. Note holes in womens restroom corrected from September 2015 inspection. Card board from shelf in kitchen removed corrected from September. Thermometer in drink cooler in warmest spot of cooler corrected from September. No more tin cans being used in kitchen corrected from September. Lo mein noodles in sieve bowl and stainless bowl were covered with plastic wrap and placed in the walk in cooler at the time of inspection. The operator indicated the noodles were cooked today and as part of the process were rinsed under cold water and then drained. They were finished cooked at about 1030 today and were at 50 degrees at about 1100. Note that after draining the noodles they need to go into the walkin to cooler. The noodles need to be covered once they are 45 degrees. Discussed an additional refrigerator so there is more refrigeration and dedicate the refrigerator to one type of food item like uncooked vegatables, or just raw meats. See above summary for individual violations. |
