Comments: 5A/5E - At 11:45, inspector temped ambient air temperature of chef unit cooler at end of cook line at 57 degrees f. Cooler thermometer showed the same. Temped all food that had been in cooler overnight and found temps ranging from 51 degrees f to 55 degrees f. Those food items were voluntarily discarded. Foods moved to walkin cooler that were in chef unit under two hours. Corrected. Cooler dial was at a "3" then turned up to "6". Maintainence was called for repair. No TCS foods to be kept in unit until repair. 8A - Food stored on floor of walkin freezer; food uncovered during storage in freezer near fryer; several squeeze bottles not labeled for contents.

Pasta was stored on top of ice, top portion of pasta was 50 degrees and lower portion was 43 degrees. As per cook pasta was out less than 2 hours and placed in cooler. Corrected 5A - At 2:10 pm inspector temped block of yellow american cheese in continental cooler on cook line and found it to be 51 degrees. Cook moved top half of block and placed it in lower section of cooler to be kept below 45 degrees. Bottom half of block temped to be 45 degrees. Corrected 8A - Plastic bottles found not labled throughout kitchen 8B - In use utensils at pizza station improperly stored. Utensils to be kept in product or washed rinsed and sanitized in between uses 10B - Shelves in cooler next to stove have rust accumulation. Shelves need to be smooth and easily cleanable
