Item 10B: Non-food contact surfaces and equipment are improperly designed, constructed, installed, maintained (equipment not readily accessible for cleaning, surface not smooth finish) Comments: The WhiteTail, inspection conducted Thursday afternoon. Inspection was prompted by a concerned customer, whom reported he heard the Golf Course Manager say to put the "left-over steaks" in the freezer to be used later (FSE18-005?). The golf course restaurant operated on it's final day open to the public, yesterday, 8/29/18, and for The Sullivan Golf League steak buffet dinner. Inspection and discussion was conducted with owner/operator Denise Vanderwerken. Kitchen inspection conducted, no food prep or food service workers present at time of inspection. Discusssed buffet service at the Whitetail for last night; service anticipated for 90 people: hip steak, tossed salad, salt potatoes, and steamed vegetables. An attendant served the steaks from a sterno heated chafing dish with a cover, and between waves of diners the dishes were covered, there was multiple replenishing of the steak and potatoes from the Alto Sham Warming unit in the kitchen. No food that was on the buffet table was kept/saved. A pan of approximately 20 steaks were observed in the walk-in cooler with an internal temp of 39F. The owner and Chef have plans to re-use the meat for a beef-tip and noodles dish for an in-house catered meal for next week's league. As per the owner, there will be a few more catered events at the facility prior to closing on October 31st for the season. Kitchen is maintained with high standards to sanitation and cleanliness. Cold holding temperatures adequate: macaroni salad 39F. Walk-in coolers are found to be very clean and sanitary. Stem thermometers available and found at proper calibration. |

Dishwasher rinse temp observed, 120F, and sanitizer available. Owners and staff are complimented for the new floor in the kitchen, and overall cleanliness throughout. |
