Operator did extensive cleaning, painting and repairing various surfaces throughout facility kitchen. The operator also stated they have implemented a routine cleaning regiment. Routine use of food probe thermometer is also part of food service operations, to ensure refrigeration equipment is properly functioning. No fruit flies were observed during reinspection. The fruit fly issue was related to the interior composting of food refuse. All food refuse must be removed from the kitchen at the end of the day and container cleaned. |

The services of a pest control professional must obtained to address and rectify the issue ASAP. Please contact inspector on Monday 1/15/18 on the status of correcting the problem. With 13 sanitary violations and 2 critical violations cited, inspection was only marginally satisfactory. A routine cleaning regiment must be implemented. A re-inspecton will occur within 30 days. If there is no significant improvement, enforcement action will be taken. Inspector left food safety packet for food workers to read. |
