Comments: Comment: Though, a Handwash violation was not cited, Both handwash stations in Employee bathroom and at bar had fresh paper towel rolls not yet installed in dispenser giving the appearance that they were hastely placed at hand wash sinks while inspector was at another part of restaurant. Operator stated they just received delivery of paper towels which was observed at the start of inspection. Inspector reminded operator to order more paper towels before they run out so, handwash stations are always equipped with paper towels while food prep is occuring.

Comments: Comment: Reinspection only involved evaluating items cited during the the 1/10/18 Inspection. Operator did extensive cleaning, painting and repairing various surfaces throughout facility kitchen. The operator also stated they have implemented a routine cleaning regiment. Routine use of food probe thermometer is also part of food service operations, to ensure refrigeration equipment is properly functioning. No fruit flies were observed during reinspection. The fruit fly issue was related to the interior composting of food refuse. All food refuse must be removed from the kitchen at the end of the day and container cleaned.

Comments: Comment: There was a large concentration of fruit flies or possibly drain flies observed throughout the kitchen. After seeing hordes of flies landing on a wiping cloth left on food prep table on the cook line, it is apparent there is an infestation that could lead to food contamination. The services of a pest control professional must obtained to address and rectify the issue ASAP. Please contact inspector on Monday 1/15/18 on the status of correcting the problem. With 13 sanitary violations and 2 critical violations cited, inspection was only marginally satisfactory. A routine cleaning regiment must be implemented. A re-inspecton will occur within 30 days. If there is no significant improvement, enforcement action will be taken. Inspector left food safety packet for food workers to read.

Comments: Facility kitchen and dry storage room appeared to be much better maintained in regard to the occurance of routine cleaning as compared to the last inspection. Items checked during inspection included: accuracy of food probe thermometers, proper hot and cold holding, availability of handwashing in food prep area and bathrooms, proper concentration of sanitizer for wiping cloths and dishwashing, use of barrier when handling ready to eat food and general sanitation. Food service staff were very cooperative during inspection.
