Comments: Currently, baked potatoes are foil wrapped then cooked and hot held above 140F in the steam table. Once cooked, the foil wrapped potatoes shall be maintained above 140F at all times, then either 1) discarded (preferred) or 2) have the foil wrap removed and cooled in accordance with apprpved cooling methods. If at any time while the potatoes are foil wrapped, they are temperature abused, the potatoes shall be discarded. Once wrapped, the potatoes become a reduced oxygen environment which if improperly hot held, cooled, or otherwise temperature abused may produce botulism toxin, a highly toxic and potentially lethal substance.

The ice machine near the fish display case is being serviced by L. Bombardier Refrigeration at the time of inspection. Very clean, well run kitchen.
