Comments: This is the second 2018 routine inspection. Kitchen flooring will require repair or replacement to avoid violations. Interview of operator about cooling of foods was inconclusive. Once the operator was told that the lack of monitorng food temperatures from 120-45°F is a critical violation, he agreed to record temperatures correlated with times to show proper cooling, and have the logs readily available at inspections for review. The need to label cleaning and sanitizing buckets was explained.

Comments: Comment: No violations in regard to food prep were observed. However, inspection occured when facility was just opening up. Discussed preparation of menu items with operator. Based on the limited business present in a small town setting, operator prepares small batches of food or it is cooked and served (pizza, bugers, sandwiches and wraps, chicken wings, pasta). The soup is prepared in gallon and half batches. A portion is placed in the steam table on the day of preparation. The remainder typically last for two more days. As mentioned in the last inspection, the large kitchen is kept clean but the lighting is poor in the remote corners.

Comments: Comment: Facility has been in operation for many years, there are surfaces that are no longer smooth, sealed and easily cleanable. The lighting is fair to poor in the food prep area. However, kitchen and surfaces appear to be thoruoghly cleaned daily. Proper Heat sanitizing by dishwasher was not verified. Discussed preparation of menu items with owner. There is no large volume of food prepared at facility that would involve cooling, reheating and hot holding. Only the soup cooked, hot held, cooled and maybe reheated and hot held a second day. Current menu was picked up during inspection. Cook touched toast with bare hands while cutting off crust. Correction: Toast intended to be used for french onion soup, was voluntarily discarded food handler was educated on importance of not touching ready to eat. However, toast placed in soup with cheese and then placed in broiler may reach 165F. Encouraged cook to use food probe which, he did while inspection was being written up. He found that the toast, cheese and soup did infact reheat up to 180F. No violation.

Comments: Comment: It was Wing Night at facility during inspection. Wings are pre-cooked in house. Operator was very familiar with and monitored critical control points (cooking, cooling and reheating) involved with preparing chicken wings. There was also home styled soup that was reheated and hot held on steam table. As mentioned in the 10/21/16 inspection report, the facility food prep area has not had many up grades over the years. However, kitchen is clean and operator is familiar with and practices food safety when preparing menu items.

Comments: Comment: The building, housing food service has been in use a long time. Surfaces and lighting improvements are due. However, dispite a good Friday crowd in the dinning area, the kitchen was clean and the operator and food workers were well versed in food safety. Operator stated he is prioritizing improvements and he is aware of what needs to be done. He recently repaired the dishwasher. He mentioned the hood is next to be repaired.

Comments: Comment: Discussed prep process of various menu items (soups, prime rib, chicken wings, spaghetti sauce) with cook. There were only three hot held food items observed during inspection. Many of the menu items are cooked, cooled and reheated to order. Also discussed using food probe thermometer to verify proper hot and cold holding , as well as, checking food items in various refrigerators to ensure units are maintaining 45F or colder. Thermometers were accurate, sanitizer had proper concentration, handwashing was available. Cook had a solid understanding of food safety. However, lighting is quite poor in the area of the pizza cooler and the back dry storage room.
