According to cook all meals are served the the same day they are prepared, with no cooling involved. Items checked during inspection included: accuracy of food probe thermometers, availability of handwashing in food prep area, availability of barrier (gloves) for handlng "ready to eat", proper concentration of sanitizer for wiping cloths, was not able to verify sanitizing by dishwasher (cook is going to check temperature after cycle, should reach 180F), also checked proper food storage and general sanitation. |
