Observed sliced tomatoes in top of cold holding units at temperature of 41dF and diced tomatoes at 38dF. Observed cheese sauce and chili at 167 and 171dF. Observed raw meats in refrigeration drawer at 38dF or less. Observed sanitizer (Quaternary Ammonia) at 200ppm per facility's test strips in 3 bay sink. Observed small build up of frozen condensate on ceiling and condenser of walk-in freezer. Observed food protected from contamination by means of plastic. Recommended relocating food from under condenser. Per manager, ice build up is still believed to be due to auto defrost malfunction and a work order has been placed for repair. | ||
