Provided and reviewed the do's and don'ts for properly cooling requirements for potentially hazardous foods with staff. After removing the large pails of beef gravey, the refrigeration unit recovered to 45F during this inspection. Implemented ice bath cooling in shallow pans and oprator needs to monitor the cooling times are being met as per subpart 14-1.40(b).
