Comments: 1. Education: discussed ill food worker exclusion policy with manager. Manager states that a policy is in place and gave description, with examples of its use in the current year. Policy as described meets ACDOH recommendations. 2. Temperatures observed: loaded baked potato soup 158F, cream of broccoli soup 155F, meatballs in marinara sauce 140F (meatball internal temperature), sliced black olives 38F, sliced tomatoes 40F, sliced cucumbers 42F, sliced green peppers 41F. Discussed meatball temperature with manager; manager states that the hot holding table has been running too hot lately and has had to be turned down, and further that the food temperatures were being monitored. Manager voluntarily raised hot holding table temperature at time of inspection without prompting from ACDOH. 3. ACDOH provided employee handwashing sticker during this visit to replace one which was missing following maintenance/repairs. 4. This operation remains an example of how a food service operation should look and operate in terms of cleanliness and observed employee food handling hygiene, both of which were excellent.
