The operator is to obtain documentation from the supplier that the farm raised fish is fed non- parasitic foods. The labels from the boxes are to be kept for 90 days after consumption of the last portion of the fish. The date of the last portion consumed should also be recorded with the label. A sick worker policy is to be developed. There is to monitoring of the front display units. The operator is encouraged to create temperature logs for time and temperature of all foods in these units. temperatures should be taken once an hour. if foods are above 70 degrees at any point during cold holding or above 45 degrees from 2 hours or more, that potentially hazardous food is to be DISCARDED! if potentially hazardous foods are above 45 degrees but less than 70 degrees for less than 2 hours that food item could be moved to a cooling unit to bring the food down to 45 degrees. |
