Cold holding temperature of black beans and cheese(s) maintained in the upper portion of deli unit observed at a temperature of 35 degrees Fahrenheit. Product stem food thermometers (3) accurate at time of inspection. Hand barriers utilized as required. Discussed cooling procedures implemented by facility operator. Proper dishwash technique implemented. Operation is limited to lunch and dinner; breakfast items are no longer served. Current menu reviewed and is limited to salads, sandwiches, wraps, grilled cheese, BLT, chicken tenders, ground beef burgers and baked goods.
