Comments: All deficiencies not corrected at the time of inspection must be corrected. The low boy cooler that was not working during the previous inspection has been taken out of service and the owner was talking about removing this unit from the property. Food in the Walk-In Cooler, Display Cooler and the upper compartment of the Bain Marie were measured to be between 34 to 39 degrees F. Hot held food items, such as Mashed Potatoes and Vegetable Soup were measured to bone 172 and 156 degrees F respectively. The final rinse on the mechanical dish washer had a chlorine residual of about 100 ppm. Report e-mailed.
