Item 5C (Critical): Potentially hazardous foods are not stored under refrigeration except during necessary preparation or approved precooling procedures (room temperature storage). Item 15A: Floors, walls, ceilings, not smooth, properly constructed, in disrepair, dirty surfaces Comments: One insect monitoring trap under the bar contained a single small cockroach. Operator indicated that the trap was old and had been under the bar for 8 or 9 months. He reported no insect activity since that time. Instructed operator to remove all old monitoring traps and replace them with new ones to verify that there are no further issues. In accordance with Stipulation Offer 16-049, the walls of the walk-in cooler and storage room have been covered with sheet metal roofing and a permanent light fixture has been installed in the walkin cooler. However, construction issues cited in the 12/14/16 inspection, but not specifically mentioned in the 12/27/16 enforcement notice, still remain. Will discuss the matter with Health Department administration to determine if the corrective actions are acceptable. Discussed cooking, cooling and reheating guidelines with operators. Provided a copy of the Health Department temperature guidelines and a copy of the Sanitary Code for Food Service Establishments to the operator at the conclusion of the inspection. |
