Instructed staff to return chicken to refrigerator and only bring out small portions that would be used within 30 minutes and maintain chicken below 45 f prior to cooking. -Observed three containers of chicken on table at room temperature after cooking. Chicken internal temperatures observed are 125, 127 and 122F. Instructed staff to immediately place in walk in with less than 4 inch depth, uncovered and separate for good airflow and heat loss.
