Comments: sweet and sour chicken observed cooling on rack in kitchen. chicken temperature ranged from 122 to 130. per operator cooked one half hour prior and was cooling for half hour and then will be placed in walk in for rapid chilling. recommend using timer to ensure chicken is on,y stored at room temperature for half hour, same as agreed upon in 12/2017 HACCP agreement or cooling egg rolls

Comments: -Observed large (3-5 lbs)container of cooked chicken left at room temperature at noon. Chicken internal temperature is 45 f and staff states that chicken held out less than 30 minutes would be used before end of busy time by 2pm. Instructed staff to return chicken to refrigerator and only bring out small portions that would be used within 30 minutes and maintain chicken below 45 f prior to cooking. -Observed three containers of chicken on table at room temperature after cooking. Chicken internal temperatures observed are 125, 127 and 122F. Instructed staff to immediately place in walk in with less than 4 inch depth, uncovered and separate for good airflow and heat loss. Rapid cooling with ice bath or refrigeration must start before cooked food reaches 120 F. Satisfactory hot and cold temperatures observed. HDO 607-324-8371
