The new manager requested any Food Safety education that can be provided would be appreciated, stating he only recently got into the food service business. We discussed monitoring critical control points such as cooking, cooling, reheating, hot and cold holding with accurate food probe thermometer when preparing food requiring time temperature control for safety. Most of the food items listed on menu are cook and serve. The French onion soup does involve cooking, cooling, reheating and hot holding. Also, discussed critical control point involved with food worker behavior such as the importance of hand washing and using a barrier or utensil when handling "ready to eat" food. Sanitation was also discussed and there are Sanitation violations cited in inspection related to routine cleaning. Inspector encouraged new manager to go to clintonhealth.org for additional food safety information. |
