Comments: Lunch being served consisted of baked ham, boiled potatoes, boiled zucchini, grapes, milk, coffee/tea. Baked ham was delivered to site cooked and stored in a hot box with heated hot packs. Individual service of each guest was completed by the operator/cook. All food temperatures, as taken with DOH thermapen were in the acceptable range. No light bulb was observed in refrigerator at time of inspection. Per interview with operator, one was on order. Construction work was being completed in kitchen and uncapped electrical wires were observed on wall adjacent to food prep area. Education was given on proper techniques for manual washing, rinsing, and sanitizing of kitchen utensils. | ||

Comments: Meals are delivered from the central kitchen around 10:30 AM. Upon arrival the temperature of the meals are measured (Today- Sweet and Sour Pork: 152 deg. F/ Rice: 153 deg. F/ Japanese vegetable mix: 150 deg. F/ Apricots: 40 deg. F). The meals for delivery are kept hot via electrical hot boxes inside the delivery vehicle and the cold held items are done so via a cooler and ice/ice packs. As per discussion with the operator the delivered meal temperatures are measured and recorded once per week. Please keep a copy of these logs on site for future review by the DOH inspector (one temperature log per month is sufficeint). The on site meals are hot held in the on site oven until lunch is served, usually around 11:30 AM. The temperatures for today's lunch were measured with a DOH thermocouple and were all within acceptable ranges. | ||
