Comments: Ray Bros Barbeque, inspection conducted Friday during prep and lunch service. Reviewed and discussed recent Notice Of Intent and review letter, regarding the outdoor smoker building and outdoor bar. Discussed, reviewed, and observed daily prep activities with Owner/Operator Tucker Ray. Thermometers installed throughout all heated and refrigerated storage. High-temp Dishwasher operational, rinse temp 210F. Prep unit items found at adequate temps; 42-44F. Operations report currenty, daily residual reported at 2.0ppm. Daily check list and refrigeration log maintained. Ice machine observed to be adequately maintained clean and sanitary. Smoker building walk-in cooler temps adequate; raw butt observed, 39F. Temporary handwashing sink set-up in the smoker bldg. Hair restraints and hand bariers are worn. Discussed a proper Temporary Handwashing Station to be set up and utilized inside the the outdoor bar. 3-4 more outdoor events are planned for the season. As per owner, the restaurant staff conducted a "deep clean" of all cooking and prep equipment, and refrigerators and freezers. *Owners and staff are complimented for overall cleanliness, facility upgrades, and operational procedures.

Comments: Chlorine residual of water supply observed at 1.5 ppm. Hot holding temperature of pulled pork, meatloaf, beans and meatloaf observed at temperatures ranging from169-177 degrees Fahrenheit. Hand barriers utilized as required. Product stem food thermometer evaluated for accuracy. Floor in downstairs dry storage room has been replaced and is clean and maintained. Floor in ice machine room, smoker preparation room and outdoor bar is scheduled to be repainted during January shut down. Outdoor bar currently not in operation. Business plan with compliance schedule to be submitted as required per 10/26/17 transmittal letter.

Discussed smoke room; a temporary hand wash station observed and adequately supplied, encourage installation of a permanent hand wash sink in the future. Discussed utilization of screen doors in smoke room. New steel grease trap has been installed; grease trap replaced in kind. Dishwasher operated in accordance with manufacturers instructions.

Observed adequate utilization of hand barriers. Hand wash sink has not been installed in outdoor bar and operator states that waste from beer tap is collected in stainless steel pan and disposed of in utility sink at the end of the evening. Discussed requirement for follow-up response in regards to outdoor bar and smoker room food prep area. New mop/utility sink has been installed. Cl2 for water supply is >1ppm.
