Discussed using Time as a Public Health Control with owner, Melanie & and her friend Monty (speaks English), to monitor deep fried buffet foods, prepared sushi held at cold buffet station, and prepared sushi rice. Issued Time as a Public Health Control waiver application. Informed owner and Monty that prepared sushi rice can no longer sit out at room temperature unless a waiver has been issued. At the time of the inspection, prepared sushi rice was sitting out at room temperature. There was a log next to sushi rice container that had the date, time prepared, time to be discarded, and employee’s initials. 2. All violations must be corrected and are subject to enforcement action if not addressed in a timely manner.
