Comments: Comments: 1) Food products which are Time/Temperature Controlled for Safety (TCS) which need to be reheated must be reheated by a process that will cause the product to reach a minimum internal temperature of 165 degrees F within a 2-hour time period. 2) As discussed during the inspection, any cooling of a TCS food must be done by a process which will allow the product to cool to below 70 degrees within 2-hours and to below 45 degrees F within an additional 4-hours.
