Comments: Product thermometer and disposable gloves readily available and used. All cooler temperatures properly maintained. Soup properly hot-held (measured to be 180+F in kettle). Operator explained her cooling and reheating methods for soups, dishwashing method (wash, rinse and sanitize) - acceptable. Open-top food prep cooler: sliced deli turkey 44F, sliced tomatoes 43F. Per operator, open-top cooler is a brand new unit, which was installed to replace an old open-top cooler that did not properly hold food temperatures at 45F in the upper compartment (while in use). Grill (small-scale) lacks a ventilation hood; however, operator stated that during pre-operational inspection, inspector approved grill for use without a ventilation hood as long as only eggs were cooked and pre-cooked bacon/sausage/chicken were only reheated/warmed per order.
