Per operator, open-top cooler is a brand new unit, which was installed to replace an old open-top cooler that did not properly hold food temperatures at 45F in the upper compartment (while in use). Grill (small-scale) lacks a ventilation hood; however, operator stated that during pre-operational inspection, inspector approved grill for use without a ventilation hood as long as only eggs were cooked and pre-cooked bacon/sausage/chicken were only reheated/warmed per order. |
