Comments: Significant progress and improvement observed to correct blue violations: stem thermometer observed , soap and paper at hand sink observed, sanitizer detected at dish machine, (hood, can opener and ice machine have been cleaned, dish area and floors improved sanitation, refrigerators have been cleaned but need additional and continuous cleaning, new screen installed. Observed markings on steam table showing food held 11am till 2 pm as previously agreed with health department. Reminded owner that all items held with out monitoring or controlling safe temperature have been previously agreed to through away after three hours.Owner reminded that food held at buffet for three hours without temperature control must be discarded and if facility is not going to individually label time on each items then all items must be discarded at the same time at three hour intervals:2pm, 5pm, 8pm.
