Comments: Due to the above violations the facility has been directed to have these violations corrected before November 20, 2013. At the time of inspection it was noted that the facility is continuing to cool the refried beans in containers that are 4 inches or more deep. The facility has been notified that cooling of products properly to prevent a potential public health hazard is of concern for this Department. When cooling items the entire item must go from 120 degrees F to 70 degrees F in two hours, THEN from 70 to below 45 degrees F within 4 hours. At the time of inspection proper hot holding was addressed, All potentially hazardous food items must be maintained at or above 140 degrees F.
