No counter space is available for food preparation; all surfaces are covered with utensils, personal items, and miscellaneous items. Rear hallway, decorating room, and baking room floors in disrepair; sticky tile adhesive on floors preventing access to these areas. Facility shall not re-open until approved by this department. Wall behind 3 bay sink requires additional cleaning (all spray foam shall be removed and wall cleaned further). Floor tiles in baking and decorating rooms to be replaced within 90 days. Missing ceiling tiles in decorating room to be replaced within 30 days. Any additions to the menu other than confections require pre approval from this office. Portable hand wash station, convection oven, and sandwich unit were placed at counter area but not in service or use. Various unnecessary items on service counter. No cupcakes or cookies were for sale at time of inspection. Owner is planning on purchasing new pans and utensils. Comments: At time of inspection, owner Travis Farewell, was in the process of restructuring food service establishment. Newer equipment to include a sandwich unit, convection oven and portable hand wash station were placed at the service counter area but not in service or in use. According, to owner, all existing equipment is going to be either discarded or used after reorganization. Facility in disarray and cluttered with unnecessary items. All floors, walls, and surfaces throughout facility (service counter, baking area, and decorating room) dirty. All equipment throughout facility dirty. All food contact surfaces dirty. No food prep at time of inspection. Cupcakes and cookies for sale in display case. Owner agreed to close facility until after restructuring complete and after the entire facility and equipment used for food preparation is cleaned and sanitized.
