Cold water bulb was added to mitigate intensity issues noted at previous inspection. Operator has expressed interest in reduced oxygen packaging and sous vide, HACCP information was provided at time of inspection. New cold holding unit is to be installed to replace sandwich line in spring. Operator states that he intends to reconfigure the kitchen and brewery areas within the upcoming year. Operator experienced some issues with rodents during late fall and early winter. Hardware cloth has been applied to chase ways and foundation to seal openings and snap traps are also used. Operator has contract with Putnam pest control.
