Comments: Operator states did not receive copy of previous inspection, but tried to address violations from memory. Will forward a second copy to operator for record. Outstanding cleaning items to date, are cleaning of mold from unused bar cooler, floors in walk -in beer storage area need mopping under shelving. Also, cleaning of interior door seal of pizza prep cooler, and around grout of cutting board. Work completed as follows: Refrigeration units for sandwich prep have been cleaned, ice machine cleaned/sanitized. Condenser of pizza prep station has been repaired; functioning at appropriate temperatures. New shelving for walk-in cooler is slowly being acquired; due to cost. States purchasing every two weeks. Exhaust fan grates over fryer/oven have been cleaned. Dishwasher part still on order. Facility is hand washing/sanitizing in the interim. Fans have all been cleaned. True upright Freezer cleaned, both interior and exterior; lower exhaust panels also replaced . Will attempt solution with City of Amsterdam for paper recycling/trash pickup to remedy cardboard storage issues. Facility cleanliness is significantly improved. Operator has placed substantial effort into requests.
