Dry beans are brought to a boil then simmered for a couple of hours on the stove. Then the beans are added to a crock pot with cold water, molasses, ketchup, and cooked bacon. Process is to be modified and temperatures monitored throughout the cooking process to keep the temperature greater than 140 degrees F at all times. Temperature logs are keep for the cooking and the cooling process of their michigan sauce and taco meat. Temperature of a plated hamburger by the cook was 162 degrees F Hot held michigan sauce and gravy tempted at temperatures greater than 140 degrees F. Cold held potentially hazardous foods in the kitchen prep unit and the refrigerator as well as the walk-in refrigerator were less than 45 degrees F. |
