Plans for installing a new floor must be submitted to our officer by 5/1/16 and the work must be complete by 6/1/16. Employees directly involved in food preparation must complete a food safety course and submit a copy of a course completion certificate by 5/1/16. 2. Currently there is no filters in the ventilation hood above the pizza oven in the back kitchen area. To follow up to see if filters are required. A large number of hot and cold hold food temperatures were measured with a metal stem probe thermocouple thermometer including salad bar items, and were 140 degrees F or above and 40 degrees F or below respectively. GOOD. Please email Margo Kampf at the address on this report as soon as is possible with a "compliance timeline" and the planned "corrective actions" that will taken addressing all of the violations cited to avoid possible enforcement action.
