Comments: On site to perform routine inspection and address complaint received from Nassau County. Complainant stated that meal that was delivered, as per health care program, which contained tater tots made them ill immediately after eating. Inspection of facility and questions asked of staff revealed that complainant is part of a program for long term care patients. Most patients receive only dinner meals and others receive both breakfast and dinner meals. The complainant is on the plan for both breakfast and dinner. At time of inspection, breakfast meals were being packaged. Frozen items, waffles and sausage, were taken from the freezer, placed in divided trays, heat sealed, labeled and returned to the freezer to be distributed to clients. Approximately 100 clients receive breakfast meals. Dinner preparation is similar. If the meal isn't already frozen, it is prepared on site by a staff wearing gloves and hair nets. Each station is equipped with a sanitizing station and timers to insure that food is not left at room temperature for more than twenty minutes. Once the component of the meal is prepared, it is allowed to cool, labeled and cooled. Those components are added to the trays, heat sealed, labeled and frozen. At no time is the environment in any packaged meal changed. Dinner meals are often prepared 300 trays at a time. For this particular client, the meals are packaged in an insulated bag with twenty four hours worth of dry ice. The bag is taken from the facility and delivered by courier to the client.
