A single bay sink will not suffice for this type of procedure. Must bring all soiled utensils and dishes to either the 3-bay sink located at Vinny's Pizza or the dishwasher in Heritage Hall. The thermometer located inside the walk in cooler read 50 degrees F. Using a metal stem probe thermometer, cheese sauce was recorded at 50F and salsa was recorded at 44F. The cheese sauce was located right under the lightbulb. In discussion with GM, Marita Dryden, the cheese sauce and salsa are not going to be used and are planned to be discarded because there are no events in the near future. Informed Marita that this cooler must be serviced if any foods requiring refrigeration are planned to be placed inside. All remaining violations must be corrected no later than 5/31/15.
