Discussed proper thawing/reheating procedures. Soups rapidly reheated to greater than 170°F. and placed in hot holding. |

Walk-in cooler and front end cooler temperatures all ok. Reviewed temperature logs and facility procedures for temperature monitoring. Operator states out of range items are generally returned to cooler. Discussed time awareness when performing temperature monitoring. If out of temperature for unknown period of greater than 2 hours, operator will discard immediately. Facility has had a turn over of staff and is in process in training new hires. Will be addressing temperature monitoring and compliance procedures at meeting scheduled for this evening. Behavioral procedures were noted recently with new hires, which were allowing temperature fluctuations, and were addressed promptly. | ||
