Hot-holding (on stove-top) - meatballs: 168 dF, marinara sauce: 145 dF. Observed that time-card system was properly implemented for pizzas/strombolis in display case. Discussed with operator that all staff should be trained on the time card system, so that it may be implemented at all times (in case operator's cannot be onsite). Observed that chicken wings are cooked and cooled according to proper techniques (initially cooked to at least 165 dF, cooled on sheet trays in walk-in, and transferred to storage containers once completely cooled (45 dF or less)). Ansul system tagged October 2015. Worn cutting boards, from previous inspection, have been replaced.
