Comments: At the time of inspection, the following items were discussed: - When cooking potentially hazardous foods such as chicken soup, cooking must be continuous to 165F then hot held at 140F or above. - Cooling of potentially hazardous items from 120F to 70F within two hours, then from 70F to 45F or below within an additional 4 hours. It is highly recommended that thick foods be cooled at 2" or less to help promote the proper cooling. - All potentially hazardous items are to be hot held at 140F or above. - Owners stated that they start the general preparation work around 2:00pm daily for service. Due to the above red violation the Department may take an Enforcement action against the facility.
