AFTER THE COOKS USE THE RAGS ON THE BREAD THEY ARE ALSO WIPING THECUTING BOARD OFF THAT IS USED FOR THE BREAD ONLY. THE FACILITY MUST USE SOMETHING THAT IS EASILY IDENTIFIED AS TO BE USED FOR READY TO EAT BREAD ONLY AND CAN NOT BE CONFUSED WITH A CLEANING DEVICE. THIS BREAD HANDELING DEVICE MUST ALSO BE EASILY CLEANABLE, FOOD GRADE MATERIAL AND NON PORUS TO PREVENT CROSS CONTAMINATION.
