Comments: Discussed: Red item follow-up only conducted. Previously cited red item violations corrected at this time, aside from shellfish tags which were not evaluated. Since last visit there have not been any additional shellfish deliveries. Follow-up inspection to occur on or about 2/11/19 to re-check dish machine, which still has a 0ppm sanitizer concentration, and on or about 3/5/19 for remaining violations. Three bay sink must be temporarily used to sanitize items until the dish machine is reaching an adequate sanitizer concentration.; Renovation to facility is a bit more extensive then previously indicated and will involve a slight expansion to the kitchen area to provide additional workspace and a walk-in cooler. The renovation must address all cited violations and include the addition of a hand wash sink and indirectly wasted food preparation sink. It must also address the baker's pride oven not being present below a hood, sine the unit is continuing to be used for more then heating dry baked goods. Plans must be submitted for review to this Department and approval of plans must be received PRIOR to beginning any renovation work to the facility. Facility fee may increase depending on the total number of seats available throughout the facility.; Ticket # 7880 issued at this time for inadequate shellfish tag procedures (tag not with product and tags not retained for 90 days), as cited on 1/31/19. Inner door gaskets of rear kitchen 2 door reachin refrigerated unit noted in disrepair, no longer smooth nor cleanable. Formica covered shelving units infront service areas beginning to fray exposing plywood under formica surfaces. SErv safe class expired in 2017. All above violations to be corrected in 2019 or FSE will face legal action.
