Comments: Observed sliced tomatoes stored in plastic insert in sandwich make unit at 44F. Observed raw shell eggs in plastic insert at 44F in same make unit. Discussed storing PHF/TCS foods below fill line displayed in insert of cold holding unit. Sliced ham wrapped in plastic in 2 door commercial refrigerator had a temperature of 36F. Sliced turkey in same unit had a temperature of 38F. Temperature of eggs in flat stored in walk-in cooler had a temperature of 37F. Temperature of macaroni and potato salads stored in large food grade buckets located in walk-in observed at at 41F and 42F respectively. Discussed when cooling potatoes, to cut them in half, rather than cooling them whole. By cutting the potatoes in half, it exposes the middle of the potatoes and increases the surface area allowing cut potatoes to cool more effectively. Observed 3 half pans of gravy ~3-4 inches full, with round plastic container filled with ice actively cooling in walk-in cooler. Pans ranged from 98F on the outside to 128F in the middle, at 1030AM. Per operator gravy was prepared half an hour earlier, and in order to thicken has to be heated to a boil. At 1055AM observed temperature of gravy at 70F on the outside, and 100F in the middle, dropping about 1 degree F per minute. Advised staff to portion gravy into an additional pan to ensure cooling schedule can be met (120F to 70F within 2 hours and 70F to 45F within 4 more hours). Operator now plans to use canned gravy, which can be heated to 140F or greater, hot held, then discarded after service or decreasing the amount of gravy that needs to be prepared and cooled. Alternatively, recommended also preparing gravy as normal, but splitting product into four pans to decrease depth of gravy to 2 inches and stirring every 15 minutes to allow for more adequate cooling.

Observed meatsauce on grill at a temperature of 150dF, as well as gravy being hot held at 144dF. Recommended stirring both food items, and similar food items on occasion to redistribute heat throughout. Cooked and cooled home fries and sliced ham in commercial refrigerator had a temperature of 37dF. Observed sliced tomatoes in top half of cold holding make unit at a temperature 45dF. Sliced tomatoes in bottom of cold holding make unit had a temperature of 37dF. Discussed storing raw foods (shell eggs) under ready to eat foods to prevent contamination.

Comments: Reinspection conducted due to 3+ critical violations during previous inspection and/or stipulation. All items from previous inspection have been corrected. Facility has accurate probe thermometer (is digital) and in location where available to be used. Sausage gravy and pancake batter, both under waiver to use time as public health control, were properly marked with discard time. Adequate cooling methods observed in walk-in refrigerator. Several items being cooled in walk-in refrig. were uncovered and in shallow depths. Discussed recommendations for cooling with Scott (cook).
