Comments: Temperature logs for home delivered meals are required quarterly. During 2018, a 3rd quarter temperature log was not completed. Facility prepping for evening meal. Cooked roast beef, au jus and dessert were shipped to Minerva site from Central kitchen earlier in the day. The food temperatures were acceptable. No cooling is completed on-site. Facility operator anticipates moving to the new kitchen prior to the end of 2018. A permit from NYSDOH will be needed prior to opening new kitchen.

Comments: All food temperatures measured were within the acceptable ranges. The manual process of washing, rinsing and sanitizing was discussed with the operator. The meal delivery logs were reviewed for the previous few months and were acceptable.

Comments: The monthly Home Delivery Meal logs were not available for July, August or September. The full-time staff person that usually completes the logs has not been working full time. A log will be completed for October and subsequent months. Logs were completed for January - June and temperatures were acceptable. Discussed proper cooling techniques. Per interview, cooling is done infrequently but when needed food is cooled in shallow containers in the refrigerator. Meatloaf temperature was 146 degrees F. Potatoes and vegetables were cooking on the stove. Milk was 41 degrees F.

Wiping clothes were observed stored properly in sanitizing solution. The usual operator was not onsite during the inspection. In her absence the fill-in operator, Suzanne, was not able to locate the the temperature meal delivery logs, as discussed with Pat during previous inspections. When Pat is back onsite please fax or email a copy of the two most recent meal delivery logs to our office. My business card was left with Suzanne so Pat can email or fax the requested information to me.
