F, feta cheese = 43 deg. F, chicken fajita filling = 44 deg. F. Discussed using Time as a Public Health Control for cold items on the "salad bar". During the inspection two issues needing to be addressed are as follows: 1) Currently, items placed out on the salad bar are not stored under refrigeration and some of the items are saved for later use. Also, food must be protected from potential sources of contamination (i.e. sneeze guard), if not doing so already. 2) Potentially hazardous food items that are sent on overnight camping trips are not stored under refrigeration.
