Comments: The buffet/serving line was observed with staff serving side dishes and overseeing any potential contamination of the buffet-style service of hotdog and hamburger toppings, including sliced tomatoes, sliced onions and lettuce. Using time as a public health control during the camp picnic/buffet style meals was discussed with the chef and the camp director. If you are interested in pursuing a waiver to use time as a public health control for cold holding potentially hazardous food during the picnic/buffet style meals please contact our office. All refrigeration units were observed working properly. Cold held items measured during the inspection included meatballs and sliced turkey that were both at 37 deg. F in the walk-in cooler, also sliced ham was measured at 41 deg. F in the top section of the deli-style cooler. Hot held hamburgers on the serving line were measured at 140 deg. F and above.
