The mechanical dishwasher was working properly and reaching the manufacturers specified wash and rinse temperatures.

Comments: Temperatures of food in the walk-in cooler ranged from 38 to 39 degrees F. Food items from previous days were cooled in shallow containers with product depth of less than 4 inches. Cold cuts being served for lunch were 41 degrees F. At 12:00 pm, breakfast pizza (2 trays) and breakfast burritos were observed cooling in the 2 door reach-in. The temperature of these items ranged from 50 to 54 degrees F. Per interview, these items had been placed in this unit to cool at 9 am. Based on this information it appeared that these items cooled from 120 degrees F to 70 degrees F within 2 hours. It was recommended that all cooling being done in the walk-in cooler, freezer or if needed ice bath in food prep sink. Dishwasher is high temp and daily log is maintained.
